Meet your Butcher & Founder of Laveau Butcher Co.

Kyle Laveau

For Kyle Laveau, agriculture has never been just a career; it’s been a way of life and something he’s been passionate about for as long as he can remember.

From a young age, Kyle loved farming, animals, and the land they’re raised on. He grew up doing and appreciating the work that goes into caring for livestock and being a good steward of the land. That early passion ultimately shaped the path he chose.

Kyle attended South Dakota State University, where he studied Agricultural Science with minors in Meat Science, Animal Science, and Agronomy, graduating in December 2018. While at SDSU, he worked in the university’s meat lab and joined the meat judging team. Through meat judging, Kyle had the opportunity to travel across the country, expanding his knowledge of meat quality, livestock, and the industry he was quickly realizing he wanted to make his lifelong career.

After college, Kyle moved to Foley, Minnesota, where he worked at Grand Champion Meats. It was there that his education truly moved from the classroom into the butcher shop. He gained hands-on experience throughout the operation and learned the skills, standards, and day-to-day workings of running a successful meat market and processing facility. Those years played a major role in developing the butcher and businessman he is today.

Eventually, home called.

Kyle returned to his local roots in Northeast Minnesota and joined Schneider’s Meats in Askov, where he continued practicing his trade, refining his skills, and learning and growing within the industry.

But throughout those years, there was always a bigger dream in the back of his mind: to build something of his own, close to home, that connected the things he cared about most: farming, animals, quality meat, and the local community.

That dream became Laveau Butcher Co.

For Kyle, the shop represents the entire journey from pasture to plate. He understands the time, work, and care farmers put into raising their animals, and he believes that same level of care should continue through processing and ultimately to the families who put that meat on their tables.

Kyle’s goal is simple: honor the animal, respect the farmer, take care of the land, and provide his community with quality meat and processing they can trust.

Laveau Butcher Co. may be a new business, but the passion and experience behind it have been growing for a lifetime.
